Needing a super delish low sugar, high fat, and gluten free treat? Thai spiced tapioca pudding to the rescue.
I first soaked 1 cup of non instant tapioca pearls with enough water to cover well for about an hour. Then, drained and put back into saucepan adding 4 cups of whole raw milk and 1 cup of coconut milk, 1/2 cup maple syrup(less or more to taste) 1 teaspoon cardamon,2 teaspoons vanilla extract, 2 teaspoons cinnamon, 1/4 teaspoon each of cloves and nutmeg(or more to taste-I added closer to 1 teaspoon), 1 teaspoon ginger, and 3/4 teaspoon turmeric. Simmer gently over low-low medium heat for 20-30 minutes. Add 1/4 cup chia seeds and stir in. Remove from heat when thickened and add 1/3 cup butter and 4 egg yolks. Top with some whipped heavy cream for an extra treat. Enjoy!
